Match the head to the oven opening

A pizza peel is a paddle for transferring pizza, not another oven or baking surface. It can be a useful gift for someone who already makes pizza and wants a better way to move it. Start with the usable oven opening, baking area and the pizza size they actually make.

A wide head needs room to pass through the opening and maneuver inside. Handle length also depends on the oven and the safe working distance required by its maker. A long outdoor-oven peel may be awkward in a small kitchen; a short paddle may not suit a deeper oven.

Launching and turning are different jobs

A broad peel supports a pizza on its way into and out of the oven. A smaller turning peel is designed for moving it during cooking. One may complement the other, but a compact turning tool is not automatically a suitable first launching peel.

Ask which tool they already own and which job is frustrating. Owners of an outdoor pizza oven may have received a peel in its original bundle. Check the supplied tool before buying another.

Choose the surface for their method

Wood, solid metal and perforated metal offer different weight, care and handling characteristics. Perforations can let some loose flour fall away, but they do not guarantee that dough will slide. Dough handling and the maker's instructions still matter.

Read the tool's heat and use limits rather than leaving a wooden peel in the oven as though it were a baking tray. A folding or detachable handle can ease storage when its connection locks securely and is intended for the way they use it.

For a home-oven pizza setup, a baking stone provides the surface while the peel helps with transfer. Give the measurements and clear care instructions with the tool; a thoughtful fit is more useful than the biggest paddle in the range.
